Love cinnamon? You must these delicious snickerdoodle cookie bars, stat! They are so soft and full of cinnamon flavor, kids and adults all love them. This snickerdoodle cookie bar recipe is also super easy to make and it makes a nice big 9X13 rectangle pan so they might last more than a day. These go great in lunches, with a cup of coffee or tea, or a late night snack.
Snickerdoodle Cookie Bars
- 1 1/3 cup all-purpose flour
- 1 1/3 cup whole wheat flour
- 1 teaspoon salt
- 2 teaspoons baking powder
- 2 teaspoons cinnamon
- 1/4 teaspoon nutmeg
- 1 3/4 cups packed brown sugar
- 1 cup unsalted butter, softened
- 2 eggs at room temperature
- 1 teaspoon vanilla extract
- 2 tablespoons sugar
- 2 tablespoons cinnamon
Preheat your oven to 350 degrees F. Line a 9X13 inch baking pan with parchment paper and set aside. In a medium bowl, whisk together the flours, baking soda, and salt.
Using a stand mixer fitted with the paddle attachment, beat the butter and brown sugar on medium-high until the mixture is light and fluffy. Here is what it will look like after one minute of mixing:

Add the eggs one at a time, beating each time until fully incorporated. Then add the flour mixture until just incorporated.
Spread the dough into your prepared pan. The dough is fairly thick so you may want to use an offset spatula or even slightly damp hands. It doesn’t have to look perfect, but make sure it is fairly even.
In a small bowl stir together the 2 tablespoons of cinnamon and 2 tablespoons of sugar. Sprinkle evenly over the dough. Bake for 25 to 30 minutes, until the edges look browned. Your kitchen is going to smell amazing!
Let cool completely before cutting.
